Pear and Blue Cheese Savory Galette
Makes 1 (12-inch) galette
I came up with this galette to indulge my love for dishes that combine savory and sweet flavors. Fruit galettes are such a lovely, rustic way to highlight seasonal fruits, which combine so well with rich French cheeses. This galette layers slowly caramelized onions, cheese, fruit, and nuts to create an elegant dish you’ll want to serve from brunch to dinner.
1 batch Shortcrust Pastry (whole wheat)
1 tablespoon extra virgin olive oil
1 tablespoon butter
1 pound sweet onions (such as Vidalia), thinly sliced
1/2 teaspoon kosher salt
1 tablespoon water
1 tablespoon Dijon mustard
About 1 tablespoon milk
Sea salt flakes, for sprinkling
